INGREDIENTS
- 2.2 lb fish fillet
- 1 yellow pepper
- 2 garlic cloves
- 1 tbsp olive oil
- 3 spring onions
- 1 can coconut milk
- 3 tsp brown sugar
- ½ cup chicken broth
- 1 tbsp shredded ginger
- 1 lemon zest
- 1 orange zest
- 1 orange juice
- ½ tsp white pepper
- Salt
- 1 tsp ground coriander
- 1 tsp basil
DIRECTIONS
1. Cut the fish filet to 3, and season it with salt and white pepper. Sauté with olive oil and set aside.
2. Cut in cubes the yellow pepper. Sauté them then add the spring onions.
3. For the sauce, fry the garlic with olive oil, add the coconut milk, salt, chicken broth, ginger, lemon zest, basil, white pepper, coriander powder, brown sugar. Cook for few minutes.
4. Add the sauce and vegetables to the fish and cook for few more minutes. Serve with steamed or jasmine rice.
TIPS:
Before Serving, add fresh basil for a more aromatic flavor.
